Ingredients

500 ml whipping cream
200 ml whole milk
2 tsp. vanilla extracts
6  egg yolks
150 grams caster sugar


100 grams figs
100 grams water
3  honey
0.5 tsp. cinnamon


Instructions

STEP 1/5

Quarter the figs.

STEP 2/5

Assemble the Food Processor bowl onto the power unit.

Fit the Knife Blade to the Food Processor bowl.

STEP 3/5

Add the first 3 items of Ingredients 1 (cream, milk, vanilla) to a clean large saucepan.

Heat over a medium-high heat and bring to a simmer.

Add the remaining items of Ingredients 1 (yolks, sugar) into a large heatproof bowl.

Whisk until combined.

Gradually pour contents of the saucepan into the heatproof bowl, whilst whisking vigorously until combined.

Carefully pour mixture back into the saucepan.

Heat over a medium heat, stirring occasionally until thickened.

Pour into a large clean bowl and cover with cling film.

Leave to cool.

STEP 4/5

Add Ingredients 2 (figs, water, honey, cinnamon) to the Food Processor bowl.

Blend until smooth.

Transfer content of the large bowl into the Food Processor bowl.

Blend until combined.

Divide the mixture between two freezer bags, remove the air and seal.

Lay the bags flat in the freezer and freeze for 5 hours.

Retrieve, clean the Food Processor bowl and fit the Knife Blade.

Break up the frozen sheets of ice cream.

Transfer broken ice cream pieces into the Food Processor bowl.

Pulse until a soft serve ice cream is formed.

Serve.

Garnish with roughly chopped figs.
