Ingredients

2  Earl Grey tea bags
300 grams boiling water
250 grams dried mixed fruit


60 grams dark muscovado sugar
275 grams plain flour
2.5 tsp. baking powder
1 tsp. mixed spice
0.25 tsp. salt
1  orange, zest of


2  eggs, beaten


25 grams granulated sugar
1  orange peel
3  orange juice


25 grams granulated sugar


Instructions

STEP 1/7

Finely slice the orange peel.

STEP 2/7

Fit the K beater to the machine.

Line the loaf tin with parchment paper.

Pre heat the oven to 180ºC.

STEP 3/7

Add Ingredients 1 (tea bags, water, fruit) into the jug.

Let rest for 5 minutes then discard the tea bags.

STEP 4/7

Add Ingredients 2 (sugar, flour, baking powder, mixed spice, salt, orange zest) into the Mixer bowl.

Attach the Mixer bowl to the machine and fit the splash guard.

Pour the contents of the jug into the Mixer bowl.

Mix on speed 1 for 2 minutes.

STEP 5/7

Add Ingredients 3 (eggs) to the bowl.

Mix on speed 1 for 2 minutes.

Pour the batter into the loaf tin.

Bake for 1 hour at 180ºC.

STEP 6/7

Add Ingredients 4 (sugar, orange peel, orange juice) into the saucepan.

Heat gently until the sugar is dissolved.

Take the saucepan off the heat and let cool slightly.

STEP 7/7

Add Ingredients 5 (sugar) into the saucepan.

Mix until combined.

Spoon the glaze over the still warm cake whilst in the tin.

Let cool.

Serve.
