Ingredients

1  olive oil


1  onion, peeled and finely chopped
2  red pepper, deseed and cut into 1cm cubes
1  garlic clove, peel, destem and crush
0.5  red chilli, deseed and finely chop


1 kg beef mince
2  tomato puree
2 tsp. chipotle paste
2 tsp. ground cumin
2 tsp. ground coriander
2 tsp. dried oregano
2 tsp. smoked paprika
1 tsp. chilli powder
  salt, as needed
  pepper, as needed


800 g tinned chopped tomatoes
200 g hot beef stock
1.5 tsp. sugar
230 g canned red kidney beans, drain


Instructions

STEP 1/6

Lift the Cooking Chef head and fit the heat shield

Fit the Stir Tool to the machine

STEP 2/6

Attach the Cooking Chef bowl to the machine and fit the Stir assist clip

Add Ingredients 1 (oil) into the Cooking Chef bowl, do not fit the splash guard

Cook at 120ºC, on speed Stir 1 for 1 minute

STEP 3/6

Add Ingredients 2 (onion, pepper, garlic, chilli) to the bowl

Cook at 120ºC, on speed Stir 1 for 5 minutes

STEP 4/6

Add Ingredients 3 (beef, tomato puree, chipotle paste, spices, seasoning) into the bowl

Cook at 120ºC, on speed Stir 3 for 7 minutes

STEP 5/6

Add the first 3 items of Ingredients 4 (tinned tomatoes, beef stock, sugar) to the bowl, fit the splash guard

Cook at 120ºC, on speed Stir 1 for 5 minutes

Reduce the temperature to 98ºC

Cook at 98ºC, on speed Stir 1 for 20 minutes

Add the last item of Ingredients 4 (kidney beans) to the bowl, fit the splash guard

Cook at 98ºC on speed Stir 1 for 10 minutes

STEP 6/6

Garnish with chopped coriander
