These soft, delicious Swedish buns are infused with cardamom and covered in a sweet glaze before being topped with pearl sugar. They are fun to make and look very impressive.
Cut the butter from Ingredients 4 into cubes and leave at room temperature to soften.
Fit the Spiral Dough tool to the machine.
Line the baking tray with parchment paper.
Add Ingredients 1 (milk, cardamom seeds) into the saucepan.
Heat over a medium heat until just boiling.
Add Ingredients 2 (butter, sugar, yeast, salt, egg) into the Mixer bowl.
Attach the Mixer bowl to the machine and fit the splashguard.
Mix on speed 1 for 1 minute or until just combined.
Transfer the contents of the saucepan to the Mixer bowl.
Mix on speed 1 for 1 minute or until just combined.
Add Ingredients 3 (flour) into the Mixer bowl.
Mix on speed 1 for 5 minutes .
Mix on speed 2 for 10 minutes.
Transfer the dough to the large glass bowl.
Cover with a tea towel.
Leave to prove for 1 hour, 30 minutes.
Retrieve, clean the Mixer bowl and fit the K-Beater.
Add Ingredients 4 (cinnamon, sugar, butter) into the Mixer bowl.
Attach the Mixer bowl to the machine and fit the splashguard.
Mix on speed 4 for 1 minute or until just combined.
Set aside.
Carefully transfer the dough from the glass bowl to a lightly floured work surface.
Knock back the dough and divide into two.
Roll into a rectangle slightly larger than an A4 piece of paper.
Spread half of the filling from the Mixer bowl over the dough.
Fold the rectangle dough into thirds. Bringing the top third down to cover the middle and the bottom third up to cover this.
Roll the dough out gently until it is about 30 cm x 15 cm deep.
Cut the dough into strips about 2 1/2 cm wide.
Cut almost the whole way down the middle of the strips so they remain joined at the top like a pair of legs.
Twist the two strips into a coiled knot and place onto the baking tray.
Repeat this process with the rest of the dough and filling.
Cover with a tea towel.
Leave to prove for 1 hour.
Pre heat the oven to 200ºC.
Add Ingredients 5 (egg, water) to the small bowl.
Mix until combined.
Gently brush the buns with the egg wash.
Bake for 15 minutes at 200ºC until golden brown.
Add the first 3 items of Ingredients 6 (cardamom, honey, boiling water) to a small bowl.
Mix until combined.
Remove the buns from the oven and brush with the contents of the small bowl.
Sprinkle the buns with the last item of Ingredients 6 (pearl sugar).
Serve.
