Destalk the sage and finely chop.
Finely chop the celery.
Preheat an oven to 200ºC.
Grease the baking tray and line with parchment paper.
Fit the Dough Tool to the machine.
Place Ingredients 1 (bacon) under a hot grill.
Cook for about 4 minutes until golden, turning halfway through.
Remove from the heat and let cool slightly.
Transfer to a cutting board and chop into smaller pieces.
Add the first six items of Ingredients 2 (flour, salt, bicarbonate of soda, sage, celery) into the Mixer bowl.
Add the chopped bacon into the bowl.
Attach the Mixer bowl to the machine and fit the splash guard.
Mix on speed 2 for about 1 minute until combined.
Add the remaining items of Ingredients 2 (yoghurt, milk) into the Mixer bowl.
Mix on speed 1 for 2 minutes until a soft dough forms
Transfer the dough to a lightly floured work surface.
Roll into a ball.
Transfer the shaped dough to the prepared baking tray and flatten slightly.
Using a sharp knife, score a cross in the top.
Sprinkle the top with a little flour.
Bake at 200ºC for 35-40 minutes until golden.
Serve with lashings of butter or good cheeses.
