How to use a lasagne roller attachment

Fit the lasagne roller attachment to your stand mixer via the slow speed outlet.

Flatten a piece of dough to roughly 1cm thick and sprinkle some flour between the rollers to prevent it from sticking. Because the rollers are made of stainless steel, you can even roll chilled and rested dough straight from the fridge.
Turn your stand mixer to speed 1 (the rollers will start turning) and then pass the dough through the rollers. Repeat this 5 or 6 times until you get a smooth surface, folding your pasta in half between rollings.

Continue to roll the pasta through the attachment, adjusting the settings down as you go until you get the desired thickness, depending on what you’re making. When you’ve got to the narrowest setting, fold the pasta in half lengthways, then in half again, and then in half again, making the dough almost square-shaped. Turn it 90 degrees and roll through the machine at the widest setting. Roll it down through the thickness settings as before, until you are left with a silky smooth rectangular sheet of pasta with perfectly straight edges.

Fresh lasagne sheets are so easy to make at home with the lasagne roller, which ensures you roll out sheets of an even thickness and with perfectly straight edges, every time.

When you’re making lasagne it’s the sheets that hold the structure together, so you don’t want them too thin, otherwise the whole thing may collapse. This is where the adjustable thickness settings come in handy. Each setting corresponds to an approximate thickness setting, which are all detailed in the instruction manual. For pasta, we recommend using settings 5 to 7.

Use your pasta sheets to create a classic lasagne, layered up with béchamel and ragu sauce, or why not try this delicious chicken pesto roll up lasagne, which you make by rolling the lasagne sheets around a chicken, butternut squash, mascarpone and basil pesto filling, before covering with mascarpone sauce and pine nuts.

Or cut your sheets to create a variety of shaped or stuffed pastas. Lasagne sheets are easy to freeze too- just store them in a sealed container, layered between sheets of baking paper to stop them from sticking together.

These tasty tacos are speedy to make and perfect for feeding a crowd. Fill them with pretty much anything you like, from chicken, beef or pork to cod, salmon or shrimp, or mixed beans, tofu or roasted veggies- and all those spicy dips and condiments, of course.

This recipe makes 12 tacos. Folding the dough portions in half across their width or length between rollings will help you get a smoother surface.

Pass the dough through the rollers until it is as thin as a tortilla, before lightly dry frying on both sides until brown spots appear.
