Unsalted Butter 110 g (about ½ cup)
Plain Flour 250 g (about 2 cups)
Baking Powder 2 teaspoons (about 10 g)
Salt ½ teaspoon (about 3 g)
Caster Sugar 250 g (about 1 ¼ cups)
Egg 2 (about 100 g)
Milk 125 ml (about ½ cup)
Blueberries 250 g (about 1 ¾ cups)
1 - Pre-heat oven - 180°C
2 - Line a clean muffin pan with paper muffin cups
3 - Sift plain flour, baking powder and salt into a clean medium bowl then set aside
4 - Attach K Beater
5 - Add unsalted butter and caster sugar to the Kenwood Bowl
6 - Mix with splashguard fitted until light and fluffy - approx 1 min, Speed Max
7 - Then add egg to the Kenwood Bowl
8 - Mix with splashguard fitted until combined - approx 30 sec, Speed Max
9 - Transfer dry ingredients to Kenwood Bowl gradually while machine is running
10 - Mix with splashguard fitted until combined - approx 1 min, Speed 4
11 - Then add milk to the Kenwood Bowl
12 - Mix with splashguard fitted until thickened - approx 1 min, Speed 2
13 - Then add blueberries to the Kenwood Bowl
14 - Mix with splashguard fitted until combined - 30 sec, Speed 3
15 - Spoon mixture into muffin pan evenly
16 - Bake until skewer tests clean - 25 min, 180°C
17 - Serve
