Pasta making tips

  • While you can use all-purpose flour to make pasta dough, traditionally ‘00’ flour is used. Its high gluten content and super fine grind means it is less prone to breaking up when its being rolled or cut, and it produces a silkier, smoother dough.
  • Use the lasagne roller attachment to roll out your pasta dough to your required thickness before using the other attachments to cut or shape. It’s much quicker and easier than rolling by hand, and you’ll get more consistent results.
  • Use salted boiling water when cooking fresh pasta for a fuller flavoured dish- unless you’re cooking sweet ravioli, in which case add some sugar to the water instead.
  • Uncooked fresh pasta can be frozen for future meals. Sheets should be dusted with flour and separated with lining paper to prevent them sticking together, while cut pasta should be dusted with flour and laid out flat on a baking sheet in a single layer, or use a drying rack, to air dry. Then place in an airtight container and freeze. Cook from frozen- just allow for a longer cooking time.
