Elevate your fresh ravioli or tortellini by encasing fresh herbs within the pasta. A great way to impress your guests at dinner, add a flavour boost and a way to use up leftover herbs.
Fit the Dough Tool.
Add flour, salt, oil and beaten eggs into the Appliance bowl, fit the splashguard.
Mix – 2-3 minutes, speed 1-2.
(Tip: Add a little water if the mixture is too dry.)
Remove the dough from the Appliance bowl and knead by hand until smooth.
Wrap in plastic wrap and let rest for 15 minutes.
Place the dough onto a lightly floured work surface and divide into four equal pieces.
Take one piece and shape into a long flat disc.
Cover the rest with a kitchen towel to prevent drying out.
Attach the Lasagne Roller attachment.
Adjust the setting to 1.
Sprinkle some flour between the rollers.
Start on speed 1.
Pass the dough through the rollers.
Fold the dough in three, rotate and repeat several times.
Repeat passing the dough through the rollers, adjusting the setting down each time until you reach setting 3.
Place the dough on a work surface and add basil leaves to the lower half of the dough.
Fold the top half of the dough over to encase the basil leaves in pasta.
Adjust the setting to 4.
Start on speed 1.
Pass the dough through the rollers.
(Tip: Adjust the setting to 5 and pass the dough through the rollers again if you want the pasta to be thinner.)
Repeat this process with the remaining pasta dough, or refrigerate until ready to use.
Remove the attachment from the machine.
