120 g Brot vom Vortag, crust removed
  Wasser, as needed, cold
80 g rote Zwiebel, trimmed
200 g cod roe, salted or smoked
60 g Zitronensaft
0.25 tsk gemahlener schwarzer Pfeffer
200 g zusätzliches natives Olivenöl

To finish
  frische Petersilie, as needed, leaves only, finely chopped
  zusätzliches natives Olivenöl, as needed

  • Fine Grating Disc
  • Knife Blade

TRIN 1/4

Add stale bread and water into a bowl until the bread is covered.

Drain immediately and squeeze out any excess water.

TRIN 2/4

Fit the Fine Grating Disc to the Food Processor attachment.

Grate onion for 10 seconds on speed 3 into the attachment.

TRIN 3/4

Remove the Fine Grating Disc and fit the Knife Blade.

Add cod roe and the soaked bread into the attachment.

Blend for 30 seconds on speed 1, until combined.

Add lemon juice and black pepper.

Blend for 20 seconds on speed 1, until combined.

Add olive oil slowly when the machine is running.

Blend for 2 minutes on speed 1, until smooth and well combined.

TRIN 4/4

Transfer the mixture into a serving bowl.

Drizzle with extra virgin olive oil and top with parsley leaves.

 

Serve.
