Quick Vegan BBQ Pizza

This recipe makes enough dough to make 2 medium-large thin crust pizzas or 4 smaller ones.

Ingredients

For the dough
250 g plain flour
1 Tbsp oil
4 g salt
4 g dried yeast
150 g warm water

For the walnut meat
100 g sundried tomatoes, drained
2 Tbsp nutritional yeast
2 tsp liquid smoke
2 tsp smoked paprika
2 tsp ground cumin
0.5 tsp chilli powder
1 tsp garlic powder
  seasoning, to taste
360 g walnut halves

For the BBQ sauce
150 g tomato ketchup
1.25 tsp smoked paprika
1 tsp ground cumin
  seasoning, to taste

For the toppings
150 g red onion, peeled, trimmed
150 g red pepper, deseeded
150 g green pepper, deseeded
150 g yellow pepper, deseeded
  vegan cheese, as needed, grated
50 g canned sweetcorn, drained
  rocket leaves, as needed
  olive oil, as needed


Utensils

Knife Blade, Knife Blade, Knife Blade, Knife Blade, Express Serve Attachment, Slicing Disc

Instructions

STEP 1/6

Line the baking trays with parchment paper.
Lightly grease a medium bowl.
Assemble the Food Processor bowl onto the power unit.
Fit the Knife Blade to the Food Processor bowl.

Add flour, olive oil, salt, yeast and warm water into the Food Processor bowl.
Attach the lid and ensure the pusher is in the feed tube.
Mix on speed Max for 1 minute until combined (be careful not to over-mix).
Remove the Knife Blade.
Transfer the dough to a lightly floured work surface.
Knead by hand for 5 minutes.
Transfer the dough to a lightly floured medium bowl.
Prove in a warm place for 1 hour or until doubled in size.

STEP 2/6

Add tomato ketchup, paprika, ground cumin and seasoning into a medium saucepan.
Stir until combined.
Place over a medium-high heat.
Bring to a boil and then reduce the heat.
Simmer, uncovered for 10 minutes.
Remove from the heat and let cool completely.

STEP 3/6

Clean and assemble the Food Processor bowl onto the power unit.
Fit the Knife Blade to the Food Processor bowl.

Add a quarter of the walnut halves into the Food Processor bowl.
Attach the lid and ensure the pusher is in the feed tube.
Pulse until roughly chopped.
Transfer chopped nuts into a medium bowl.
Repeat the same process with the remaining walnut halves, work in 2-3 batches so that you do not overload the machine.
Add sundried tomatoes, yeast, liquid smoke, paprika, spices and seasoning into the Food Processor bowl.
Pulse until smooth.
Transfer the tomato mixture into the medium bowl.
Stir until combined with the walnut mixture.

STEP 4/6

Preheat the oven to 200ºC.
Retrieve the proved dough.
Transfer the dough to a lightly floured work surface.
Divide into 2 or 4 equal pieces, depending on how many pizzas you want to make.
For two pizzas, roll out the dough into two 9” (22cm) round discs.
Place the shaped dough on the prepared baking trays and set aside.

STEP 5/6

Assemble the Food Processor bowl onto the power unit.
Fit the Slicing Disc, attach the Express Serve lid and ensure it is locked into place.
Place a medium bowl underneath the Express Serve.
Slice red onion, red, yellow and green peppers into the medium bowl using the pusher.

STEP 6/6

Spread 3-4 Tbsp of BBQ sauce over each of the pizza bases.
Top with three quarters of grated vegan cheese – save a handful for finishing.
Add most of the sliced onions, peppers, sweetcorn (reserving a handful for garnish).
Spoon over some of the walnut meat, followed by remaining cheese.
Bake at 200ºC for 10-15 minutes.

 

To Serve
Garnish with reserved slices of peppers, onion, sweetcorn and rocket leaves.
Drizzle with olive oil.
Serve immediately.


Once you have made the walnut meat base recipe you will have enough mixture for the Vegan Tacos recipe, then use the remaining mixture in this recipe

Store remaining walnut meat mixture in a sealed container in the fridge for up to 1 week.
