Chocolate and Banana Baked Oats

This recipe is a great way to use up any over-ripe bananas, paired with chocolate, oats, and maple syrup, for a delicious snack full of fruit and fibre.

Ingredients

Servings: 9
Makes: 1

3 Tbsp coconut oil
3  bananas, ripe, peeled, cut into quarters
450 ml milk
2 tsp vanilla extract
80 g maple syrup
200 g rolled oats
20 g cocoa powder
1 tsp baking powder
1 Tbsp ground flaxseed
0.25 tsp salt

To finish
2  bananas, peeled, sliced into 0.5 cm discs

To serve
1 Tbsp maple syrup
  yoghurt, as needed


Instructions

STEP 1/3

Preheat the oven to 190ºC.
Grease the baking dish with 1 Tbsp of coconut oil.
Fit the K-Beater.
Add bananas into the appliance bowl, fit the splashguard.
Mix 2 minutes, speed Min.
Mix 1 minute, speed 1 and then reduce the speed.

STEP 2/3

While the machine is running, slowly pour milk into the appliance bowl.
Mix until combined – 30 seconds, speed Min.
Add vanilla extract, 2 Tbsp melted coconut oil and maple syrup.
Mix – 1 minute, speed Min.
Add oats, cocoa powder, baking powder, ground flaxseed and salt.
Mix until combined – 2 minutes, speed Min.

STEP 3/3

Pour the mixture into the baking dish.
Top with sliced bananas evenly.
Bake – 45 minutes, 190ºC.
Remove from the oven and drizzle with maple syrup.
Let cool – 10 minutes and then divide into 9 portions.

 

To Serve
Serve with a dollop of yoghurt.
Alternatively, let cool completely, divide into portions and refrigerate until needed.


These oats can be served warm or allowed to cool completely and packed into a lunchbox for something sweet on the go.
