Apple Butter

This recipe is a great way to use up overripe, bruised and 'ugly' apples or help you use up a glut of fresh fruit that you may have grown yourself.

Ingredients

Servings: 10
Makes:
For the apple butter
700 g apples, quartered, skin on
90 g water
2 Tbsp lemon juice

To finish (optional)
  honey, as needed


Tools

  • Food Mill
  • Fine Milling Disc
  • Paddle Tool

Utensils

  • 1 Saucepan
  • 1 Mixing bowl

Instructions

STEP 1/2

Add apples, water and lemon juice into a large saucepan.
Cover with a lid.
Heat over a high heat for 5 minutes until a fast simmer.
Remove the lid, stir and reduce the heat.
Cook over a medium heat for 45-50 minutes until the fruit is soft enough to crush with a wooden spoon and the liquid has almost evaporated.
Transfer the cooked apples into a large mixing bowl.
Set aside and let cool completely.

STEP 2/2

Fit the Fine Milling Disc, coarse side up, to the Food Mill attachment.
Attach the 7L Mixer bowl to the machine.
Assemble the Food Mill attachment to the machine, fit the Paddle Tool.
Transfer the cooled apples into the attachment.
Stir on speed Min for 30 seconds.
Stir on speed 1 for 2 minutes.
Scrape the sides of the Food Mill with a spatula.
Stir on speed 1 for 1 minute.
Scrape the sides of the Food Mill with a spatula.
Stir on speed 1 for 1 minute.
Remove the attachment from the machine.
Use a spatula to scrape the purée from the underside of the screen and transfer to the 7L Mixer bowl.
Discard any solids left in the Food Mill attachment.

 

To Finish
To sweeten the purée, add honey or sweetener and stir to combine.

 

Serve
Store in a jar or airtight container in the fridge for 5 days, or freeze for up to 3 months.

 

Substitutions
Honey can be replaced with sweetener.
