Chilli Con Carne

Chilli is an easy dish to prepare mid-week and is a great dinner to cook for friends. Make it as spicy as you like by adding more chilli, then serve with rice and your favourite sides.

Ingredients

Servings: 8
Makes: 8 Meal

1 Tbsp olive oil
1  onion, finely sliced
2  red peppers, deseeded, cut in 1 cm cubes
1  garlic clove, crushed
1/2  chilli, deseeded, finely chopped
1000 g beef mince
2 Tbsp tomato puree
2 tsp chipotle paste
2 tsp ground cumin
2 tsp ground coriander
2 tsp dried oregano
2 tsp smoked paprika
1 tsp chilli powder
  salt, as needed
  pepper, as needed
800 g tinned chopped tomatoes
200 g hot beef stock
1.5 tsp sugar
230 g canned red kidney beans, drained


Tools

  • Stir Tool
  • Stir Assist Clip
  • Splashguard

Instructions

STEP 1/5

Lift the Cooking Chef head and fit the heat shield.
Fit the Stir Tool to the machine.

STEP 2/5

Attach the Cooking Chef bowl to the machine and fit the Stir assist clip.
Add oil into the Cooking Chef bowl, do not fit the splashguard.
Cook at 120ºC, on speed Stir 1 for 1 minute.

STEP 3/5

Add onion, pepper, garlic, chilli to the bowl.
Cook at 120ºC, on speed Stir 1 for 5 minutes.

STEP 4/5

Add beef, tomato puree, chipotle paste, spices, seasoning into the bowl.
Cook at 120ºC, on speed Stir 3 for 7 minutes

STEP 5/5

Add the tinned tomatoes, beef stock, sugar to the bowl, fit the splash guard.
Cook at 120ºC, on speed Stir 1 for 5 minutes.
Reduce the temperature to 98ºC.
Cook at 98ºC, on speed Stir 1 for 20 minutes.
Add the kidney beans to the bowl, fit the splash guard.
Cook at 98ºC on speed Stir 1 for 10 minutes.

Serve garnished with fresh coriander.
