Ingredients

Servings: 8
Makes: 8 Burgers

700 g beef, 20% fat, cut into strips
1  onion, small, finely chopped
1 tsp kosher salt
1.5 tsp ground black pepper
1 tsp salt
0.25 tsp garlic powder
1 tsp paprika
1 tsp brown sugar

To finish
2 Tbsp vegetable oil
8 slices cheddar cheese
8  brioche buns
  tomato relish, as needed
  lettuce leaves, as needed

Tools

  • Food Mincer Attachment
  • K-Beater

Instructions

STEP 1/3

Fit the K-Beater to the machine.

STEP 2/3

Assemble the Food Mincer attachment to the machine with the medium screen fitted to the slow speed outlet.

Place the Mixer bowl underneath.

Mince beef on speed 4 into the bowl.

Remove the Mincer and attach the slow speed outlet cover back to the machine.

Add onion, kosher salt, seasoning, spices and sugar into the Mixer bowl.

Attach the Mixer bowl to the machine.

Mix on speed 1 for 1 minute until well combined.

STEP 3/3

Divide the mixture into 8 equal pieces, approx. 80-100 g each.

Shape into patties, approx. ¾ inch thick.

Make an indention in the middle of each patty to prevent bulging in the centre of the burger as it cooks.

Place the burgers on the grill brushed with oil with the indented side upwards.

Cook for 4-5 minutes on the first side then flip the burgers over.

Cook for a further 4-5 minutes, until the burgers have reached the desired doneness.

About 1 minute before taking the burgers off the grill, lay a slice of cheese on each burger patty.

To serve

Cut a brioche roll in half then place the cooked burger on top.

Serve with a tomato relish and with salad vegetables as desired.
