Tabbouleh

A flavour packed parsley salad accompaniment which is refreshing and vibrant, serve alongside falafel, kibbeh and warm pitta breads.

Ingredients

Servings: 4
Makes: 1

100 g fine bulgur wheat
50 ml hot water, just boiled
140 g fresh parsley leaves
15 g fresh mint leaves, destalked
10 g fresh dill, destalked
3  salad tomatoes, quartered
1  cucumber, cubed 1 cm
2 tbsp olive oil
1  lemon, juice of
1 tsp lemon, zest of
1 tsp salt
0.5 tsp allspice
0.5 tsp cinnamon


Instructions

STEP 1/3

Combine bulgur wheat and hot water in a small bowl.

Cover the bowl with a plate and set aside whilst you prepare the vegetables.

STEP 2/3

Assemble the Food Processor attachment.

Fit the Knife Blade.

Add parsley, mint and dill into the Food Processor bowl.

Select Max speed for 20 seconds until finely chopped.

Transfer the chopped herbs into a medium mixing bowl.

STEP 3/3

Add tomatoes into the Food Processor bowl.

Use the pulse function in 3-4 short burst to roughly chop.

Transfer the chopped tomatoes into the salad.

Add cucumber, olive oil, lemon juice, lemon zest, salt, allspice and cinnamon into the salad.

Transfer the soaked bulgur wheat into the salad and stir to combine.

Serve or refrigerate.


If you have time, prepare this salad in advance and refrigerate to allow the flavours to develop.
