Preheat the oven to 200ºC
Grease the baking trays and line with parchment paper or use silicone mats
Lift the Cooking Chef head and fit the heat shield
Fit the Creaming beater to the machine
Attach the Cooking Chef bowl to the machine
Add the first four items of Ingredients 1 (water, milk, butter, salt) into the Cooking Chef bowl, fit the splash guard
Cook at 104ºC on speed stir 1 for 2 minutes, until the butter melted and the liquid starts boiling
Add the last item of Ingredients 1 (flour) to the bowl
Cook at 104ºC on speed 3 for 2 minutes
Mix on speed 1, heat off, for 2 minutes
While the machine is running, gradually add Ingredients 2 (eggs) into the Cooking Chef bowl
Mix on speed 3 for 2 minutes, until glossy.
Transfer the mixture into a piping bag
Pipe the mixture onto the baking trays
Space them at least 2,5 cm (1”) apart
Use a wet finger to smooth the tops of the choux buns
Bake at 200ºC for 25 minutes until golden
Remove the baking trays from the oven
Using a skewer, make a hole in the base of choux buns
Bake at 200ºC for 25 minutes until dry
Remove from the oven and let cool completely
Use a piping bag to fill each choux bun with your chosen filling
Retrieve, clean the Cooking Chef bowl and fit the Creaming beater
Add Ingredients 3 (chocolate, whipping cream) into the Cooking Chef bowl, fit the splash guard
Cook at 60ºC on speed stir 1 for 3 minutes
Set aside and let cool slightly until thicken
Dip the filled choux buns in the warm chocolate sauce or pour it over the top
Serve warm
