2 celery stalks
1 - Fit the Dicing attachment to the front, slow speed outlet on your Chef Kitchen Machine.
2 - Prepare your vegetables by peeling the onions and carrots. Halve the onions and top and tail the celery.
3 - If you have more or less of one vegetable, it does not matter and you can use up whatever you have in your fridge.
4 - Set the machine to speed setting one. Place a bowl under the dicing attachment to catch the vegetables.
5 - Place the vegetables through the dicing attachment.
6 - In a large pan, heat a knob of butter with a dash of oil. This will prevent the butter from burning.Place your diced vegetables in the pan and on a low heat, gently sauté until soft and golden. Be careful not to let your vegetables burn. Golden bits will add flavour but any blackened bits will cause the mirepoix to taste bitter.
7 - Move around in the pan regularly. The mirepoix can take anything from 30 minutes to an hour to soften.Once ready, add it to the dish you are cooking. This could be anything from a stew, soups or pasta dish. If not using immediately, spoon into a sterilized jar and store in the fridge for up to 5 days.
