Cranberry and Raisin Flapjacks

Ingredients

Dried Apricots: 50 g (about 3)
Sugar: 125 g (about ½ cup)
Butter: 125 g (about ½ cup)
Golden Syrup: 3 tablespoons (about 63 g)
Oats: 250 g (about 1 ½ cups)
Raisins: 50 g (about ¼ cup)
Linseeds: 2 tablespoons (about 21 g)
Dried Cranberries: 50 g (about ½ cup)

Method

1 - Grease a clean square pan
2 - Pre-heat oven - 180°C
3 - Add sugar, butter and golden syrup to a clean saucepan
4 - Heat until combined while stirring frequently
5 - Set aside
6 - Attach K Beater
7 - Add oats, dried apricots, raisins, linseeds and dried cranberries to the Kenwood Bowl
8 - Transfer content of saucepan to Kenwood Bowl
9 - Mix - 2 min, Speed 2
10 - Transfer content of Kenwood Bowl to square pan and gently pat into pan
11 - Use a knife to score out squares
12 - Bake until golden brown - 15 min, 180°C
13 - Let cool on round wire rack
14 - Cut
15 - Serve
