Speculoos Truffles

Ingredients

Servings: 10
Makes: 20
For the truffle mixture
120 g cream cheese, at room temperature
50 g speculoos spread
225 g speculoos biscuits, crushed

For the chocolate coating
200 g white chocolate

For the decoration
  speculoos spread, as needed, melted
  speculoos biscuits, as needed, crushed


Instructions

STEP 1/5

Line the baking trays with parchment paper.
Fit the Creaming Beater
Add cream cheese into the 5L Appliance bowl.
Mix for 2 minutes, speed 2.
Add speculoos spread into the 5L Appliance bowl.
Mix until combined for 2 minutes, speed 1.
Add speculoos biscuits into the 5L Appliance bowl.
Mix until combined for 2 minutes, speed 1.
Remove the 5L Appliance bowl from the machine.

STEP 2/5

Roll 1 Tbsp (20 g) of the mixture into a ball.
Repeat the same with the remaining mixture.
Place the truffles on the prepared baking tray.
Chill in the freezer for 30 minutes.

STEP 3/5

Clean and fit the Creaming Beater.
Add white chocolate into the warming bowl, fit the splashguard.
Heat until melted for 10 minutes, heat setting 7, speed Stir 1.
Or use the Chocolate melting preset if applicable.

STEP 4/5

Remove the chilled truffles from the freezer.
Carefully dip them in the melted chocolate.
Place the truffles onto the clean lined baking tray.
Chill in the fridge for 15 minutes until set.

STEP 5/5

Add the melted Speculoos spread into a piping bag.
Drizzle over the truffles.
Sprinkle with crushed Speculoos biscuits over the top.

 

Serve
Store in the fridge for up to 3-4 days.


These no-bake delights are coated in white chocolate and sprinkled with crushed biscuits; however, you can use a dark chocolate coating if you prefer.
