Ingredients

3 Tbsp vegetable oil


150 grams onions, sliced
175 grams leek, sliced
2  garlic cloves, sliced
2 tsp. ground coriander
2 tsp. ground cumin
0.5 tsp. chilli flakes
1 tsp. ground cinnamon


400 grams tinned chopped tomatoes
100 grams dried red lentils
400 grams sweet potatoes, peeled, cut into 1 cm cubes
400 grams tinned chickpeas
200 grams red peppers, deseeded, cut in 1 cm cubes
1  orange, thick slices of peel
400 grams vegetable stock, hot


Instructions

STEP 1/4

Lift the Cooking Chef head and fit heat guard.

Fit the Stir tool and assist clip to the machine.

Attach the Mixer bowl to the machine.

Add oil into the Mixer bowl, fit the splash guard.

Heat at 120ºC on speed 4.

STEP 2/4

Add onion, leek, garlic, and dried spices to the bowl.

Heat at 120ºC, on speed 4 for about 10 minutes.

STEP 3/4

Add tomatoes, lentils, potato, chickpeas, peppers, orange peel, and stocks into the Mixer bowl.

Heat at 98ºC, on speed 3 for about 60 minutes.

Discard the orange peel.

Serve.

STEP 4/4

Garnish with coriander.
