Ingredients

100  pancetta, cubed 1 cm
2  garlic cloves, chopped
50  Arborio rice
2.5  tomato purée
70  savoy cabbage, sliced
1  dried rosemary
45  celery stalks, sliced
60  leeks, sliced
75  onions, sliced
75  carrots, peeled, sliced
1000  vegetable stock, hot
  salt, as needed
  pepper, as needed


Instructions

STEP 1/1

Fit the Stir Tool and Stir Assist Clip.
Add pancetta, garlic, rice, tomato purée, cabbage, rosemary, celery, leek, onion, carrot, stock, salt and pepper into the appliance bowl, fit the splashguard.
Heat until boiling for 2 minutes at 140ºC, on speed Stir 3.
Cook for 20 minutes at 103ºC, on speed Stir 4, until softened.

 

To serve

Serve with crusty bread.


Substitutions: Pancetta can be replaced with bacon or smoked lardons. Onion can be replaced with shallots.
