Cabbage Gratin

A quick cabbage and gruyere gratin, topped with a crunchy walnut and parsley pesto garnish, which can be served as a side dish or a main meal, made with the Food Processor attachment.

Ingredients

Servings: 6

For the vegetables
150 g onion, trimmed, peeled, cut to fit the feed tube
400 g white cabbage, cut to fit the feed tube
1 Tbsp olive oil

For the cheese sauce
200 g gruyere cheese, cut to fit the feed tube
30 g butter
35 g plain flour
500 ml whole milk, warm
0.5 tsp salt
1 tsp black pepper
1 tsp mustard powder
0.25 tsp nutmeg, freshly grated

For the pesto garnish
100 g walnuts, halved
20 g fresh parsley, destalked
2 Tbsp olive oil


Instructions

STEP 1/8

Grease the baking dish.

Assemble the Food Processor attachment to the machine.

Fit the Thin Slicing Disc, attach the lid and ensure it is locked into place.

STEP 2/8

Slice onion into the Food Processor bowl.

Transfer the sliced onion into a small bowl and set aside.

STEP 3/8

Work in batches to prevent exceeding the maximum capacity of the Food Processor bowl.

Slice cabbage into the Food Processor bowl.

Transfer the sliced cabbage into a large bowl and set aside.

STEP 4/8

Add olive oil into a large saucepan.

Place over a medium-high heat.

Transfer the sliced onion into the saucepan.

Sauté for 3 minutes until softened.

Transfer the sliced cabbage in batches into the saucepan.

Sauté for 10 minutes, stirring occasionally until wilted.

Add a splash of water if the mix begins to stick to the saucepan.

Transfer the cabbage and onion mixture into the baking dish and set aside.

Reserve the saucepan for later, no need to clean it.

STEP 5/8

Retrieve and clean the Food Processor bowl.

Assemble the Food Processor attachment to the machine.

Fit the Fine Grating Disc, attach the lid and ensure it is locked into place.

Grate gruyere cheese into the Food Processor bowl.

Transfer the grated cheese into a clean, small bowl and set aside.

STEP 6/8

Preheat the oven to 180ºC.

Retrieve the large saucepan.

Place over a medium-high heat.

Add butter into the saucepan.

Heat until the butter melts and starts bubbling.

Add flour into the saucepan.

Cook for 5 minutes, stirring constantly.

Gradually add milk into the saucepan.

Cook, stirring constantly until the sauce thickens and then reduce the heat.

Add seasoning, mustard and nutmeg into the saucepan.

Transfer two-thirds of the grated cheese into the saucepan.

Stir until the cheese has melted.

Pour the cheese sauce into the baking dish.

Sprinkle the remaining grated cheese over the top.

Bake at 180ºC for 30 minutes until golden brown and bubbling.

STEP 7/8

Retrieve and clean the Food Processor bowl.

Assemble the Food Processor attachment to the machine.

Fit the Knife Blade to the machine.

Add walnuts, parsley and olive oil into the Food Processor bowl.

Attach the lid and ensure it is locked into place.

Pulse until roughly chopped.

STEP 8/8

To finish

Remove the gratin from the oven.

Garnish with the walnut and parsley topping.

Let rest for 10 minutes before serving.


Any leftovers can be stored in an airtight container for up to 4 days.
