Banana and Chocolate Chip Muffins

Sweet banana muffins are a great way to use up ripe bananas, we’ve added chocolate chips, but you could add blueberries or chopped nuts depending on what you have or what needs using up.

Ingredients

Servings: 12
Makes: 12

260 g ripe bananas, (about 3) peeled, broken into thirds
200 g plain flour
135 g light brown sugar
85 g vegetable oil
70 g dark chocolate chips
1  egg
2 Tbsp milk
1 tsp bicarbonate of soda
1 tsp baking powder
0.5 tsp salt
1.5 tsp ground cinnamon
  banana chips, as needed, optional
  demerara sugar, as needed, optional
  dark chocolate chips, as needed, optional


Instructions

STEP 1/2

Preheat the oven to 190°C.
Line the muffin tin with muffin cases.
Fit the K-Beater.
Add bananas into the Appliance bowl.
Mix for 1 minute, speed 1.
Add flour, sugar, oil, chocolate chips, egg, milk, bicarbonate of soda, baking powder, salt and cinnamon into the bowl.
Mix until combined for 1 minute, speed 1 and then scrape down the sides of the bowl.
Mix until combined for 30 seconds, speed 1.

STEP 2/2

Divide the mixture evenly between the muffin cases.
Sprinkle with banana chips, demerara sugar and a few chocolate chips (optional).
Bake for 5 minutes, 190ºC and then reduce the temperature to 170ºC.
Bake until a skewer inserted comes out clean for 15 minutes, 170ºC.
Remove from the oven and let cool in the tin for 5 minutes.
Transfer muffins to a wire rack to cool completely.

 

Serve

 

Substitutions
Vegetable oil can be replaced with melted butter.


To decorate the tops of the muffins add some banana chips, chocolate chips and a sprinkle of demerara sugar to the muffins before baking, or top with some sliced caramelised banana after baking.
