Ingredients

Servings: 6
Makes:

1 cup plain flour
1 tsp baking powder
1 tsp salt
0.25 tsp black pepper
0.25 cup oil, or melted butter
0.5 cup milk
1  egg
1 cup zucchini, grated (1 medium size)
0.5 cup cheddar, grated
2 tbsp fresh mixed herbs, chopped (chive, parsley or dill)
0.5 tsp chilli flakes, optional


Instructions

STEP 1/4

Preheat the oven to 200C

STEP 2/4

In the food processor add the flour, baking powder, salt, pepper, oil or melted butter, milk and egg to make the batter.
Process for 20 seconds or until well combined.

STEP 3/4

In a mixing bowl with the grated zucchini, grated cheese, herbs and chilli (optional), pour over the wet batter and stir through to combine.

STEP 4/4

In greased muffin molds/tins, fill up 6 regular muffin sized molds.
Bake for 15 min or until golden brown.

Remove and allow to cool or serve warm.
