Ingredients

3  banana, ripe
75 g vegetable oil
100 g light brown sugar
225 g plain flour
4 tsp. baking powder
1 tsp. cinnamon
1  peanut butter

Instructions

STEP 1/4

Peel and halve the bananas.

STEP 2/4

Preheat the oven to 180ºC.

Grease the loaf tin and line with parchment paper.

Fit the K beater to the machine.

STEP 3/4

Add the first items of Ingredients 1 (bananas) into the Mixer bowl.

Attach the Mixer bowl to the machine and fit the splash guard.

Start the machine on speed Min and gradually increase speed.

Mix on speed 4 for about 2 minutes until mashed.

Add the remaining Ingredients 1 (oil, sugar, flour, baking powder, cinnamon, peanut butter) into the Mixer bowl.

Start the machine on speed Min and gradually increase speed.

Mix on speed Max for 30 seconds until combined.

Mix on speed 4 for 30 second until fully combined.

Transfer the mixture into the prepared loaf tin.

Top with the remaining halved banana.

Bake at 180ºC for about 60 minutes until a skewer inserted comes out clean.

Check the cake after 20 minutes to make sure the top is not burning.

Cover with foil if necessary and return to the oven.

Remove from the oven and let cool in the tin.

STEP 4/4

Serve slightly warm or cool completely before serving.

Alternatively, you could serve slices of the cake toasted with vegan butter/spread.
