Preheat the oven to 200ºC.
Add oil, tomatoes and garlic onto a baking tray and mix to coat.
Roast for 20 minutes at 200ºC.

Heat for 1 minute at 140ºC, speed Off.
Add lemongrass, ginger and chilli.
Cook for 3 minutes at 140ºC, on speed Stir 2, until combined.
Add spices.
Cook for 1 minute at 140ºC, on speed Stir 2, until fragrant.
Add roasted ingredients, stock and paste.
Cook for 5 minutes at 98ºC, on speed Stir 2, until tender.
Let cool slightly.
Transfer the soup into the Blender attachment.
Blend until smooth.
Remove the attachment from the machine.
Clean the Appliance bowl and fit the Stir Tool.
Transfer the soup back into the Appliance bowl.
Add rice.
Cook for 20 minutes at 98ºC, on speed Stir 2, until the rice is cooked.
