Stifado (Beef Stew)

Stifado is a deliciously comforting beef stew flavoured with red wine, garlic and warming spices. Serve with fluffy steamed rice or mashed potatoes.

Ingredients

Servings: 6
Makes: 1

4 Tbsp olive oil
1500 g chuck steak, 5 cm cubed
500 g pearl onions, peeled, whole
2 Tbsp tomato paste
2  bay leaves
1  cinnamon stick
6  cloves
0.25 tsp allspice
1 tsp fine sea salt
0.5 tsp ground black pepper
600 g red wine
400 g tinned chopped tomatoes
  water, as needed
  mashed potatoes, to serve


Instructions

STEP 1/3

Fit the Stir Tool and Stir Assist Clip.
Add 2 Tbsp oil into the Appliance bowl.
Heat for 1 minute at 180ºC, speed Off, until hot.
Add 250 g beef. 
Cook for 3 minutes, at 180ºC, on speed Stir 2, until browned.
Transfer the beef into a clean bowl and set aside.
Repeat the same process with the remaining beef until all the beef has been browned.

STEP 2/3

Add 2 Tbsp oil and pearl onions into the Appliance bowl.
Cook for 5 minutes at 120ºC, on speed Stir 2, until translucent.
Add garlic.
Cook for 1 minute at 120ºC, on speed Stir 2, until fragrant.
Add tomato paste, bay leaves, cinnamon, cloves and allspice.
Cook for 2 minutes at 120ºC, on speed Stir 2, until combined.

STEP 3/3

Remove the Stir Tool.
Add the browned beef and its juices into the Appliance bowl.
Add salt, pepper, red wine and tomatoes.
Add a little water until covered, if needed.
Stir with a wooden spoon to combine and then fit the splashguard.
Cook for 1 hour 20 minutes at 98ºC, speed Off, until softened.
Stir with a wooden spoon to combine.
Cook for 1 hour 30 minutes at 98ºC, speed Off, until tender.
Let rest for 15 minutes.
Remove the bay leaves, cinnamon and cloves.

 

To serve
Serve with mashed potatoes.

 

Substitutions
Pearl onions can be replaced with shallots.
