Ingredients

Servings: 6
Makes: 18

70 g spinach
15 g fresh coriander, destalked


30 g baby spinach, wilted
  water, as needed, boiling
170 g feta
130 g soft cheese
40 g milk
1  lemon juice
  lemon zest, as needed
25 g pine nuts, toasted
10 g fresh chives, finely chopped
  black pepper, to taste


50 g butter
450 ml milk
3  egg
150 g plain flour
  salt, to taste


25 g butter


1  avocado, destoned, flesh removed from the skin, sliced
  cherry tomatoes, as needed, halved
  mushrooms, as needed, sliced, cooked


Instructions

STEP 1/7

Assemble the Food Processor attachment to the machine

Fit the Knife blade to the machine

STEP 2/7

Add Ingredients 1 (spinach, coriander) into the Food Processor bowl

Attach the lid and ensure it is locked into place

Pulse until puree

Scrape the sides of the bowl if needed

Remove the Food processor attachment from the machine

Transfer the spinach puree to a small bowl and set aside

STEP 3/7

Add the first item of Ingredients 2 (baby spinach) into a colander

Place a colander over a large bowl

Pour the second item of Ingredients 2 (boiling water) over the spinach and let cool

Squeeze the excess water from the spinach and roughly chop the spinach

Transfer the chopped spinach into the Mixer bowl

Fit the K beater to the machine

Add the remaining Ingredients 2 (feta, soft cheese, milk, lemon juice, lemon zest, pine nuts, chives, black pepper) into the Mixer bowl

Mix on speed 5 for 30 seconds or until combined

Transfer the mixture to a large bowl

Refrigerate until needed

STEP 4/7

Add the first item of Ingredients 3 (butter) into the 20 cm frying pan

Heat on a low heat until melted

Transfer the melted butter to a small bowl and set aside

Reserve the frying pan for later

Retrieve, clean the Mixer bowl and fit the Whisk tool

Add the remaining Ingredients 3 (milk, eggs, flour, salt) into the Mixer bowl

Attach the Mixer bowl to the machine and fit the splash guard

Mix on speed 5 for about 30 seconds until combined

Scrape down the sides of the bowl with a spatula

Transfer the melted butter into the Mixer bowl

Mix on speed Max for 30 seconds or until combined

Transfer the spinach and herb puree from the small bowl into the Mixer bowl

Mix on speed Max for 10 seconds or until combined

STEP 5/7

Place a 20 cm frying pan over a medium heat

Heat until hot

Add Ingredients 4 (butter) into the frying pan

Remove any excess with kitchen towel

Pour a ladleful of batter into the pan

Swirl the pan to coat the bottom

Cook for 1 minute on each side or until cooked through

Transfer the pancake to a plate

Keep covered and warm in a low oven while you cook the rest

Repeat the same with the remaining batter

STEP 6/7

Serve the pancakes warm or chilled with some of the whipped cheese filling

STEP 7/7

Top with your choice of toppings such as sliced avocado, halved cherry tomatoes and cooked mushrooms
