A fantastic breakfast or brunch, we have used coriander and chives in the batter, but you could use basil, sage, parsley, or a mixture.
Fit the Blender attachment Add flour, eggs, milk, butter, spinach, coriander, chives and sea salt into the Blender Select the Blend preset.
Preheat the frying pan on a medium-high heat Add unsalted butter Heat until melted on a medium-high heat Spoon the batter into the frying pan, just enough to cover the pan Cook on each side until it starts to brown, medium-high heat Transfer the pancake to a plate Repeat the same with the remaining batter Spread cream cheese on each pancake Top with smoked salmon.
Serve.
Substitutions: Whole milk can be replaced with oat or soy milk Unsalted butter can be replaced with vegan butter Fresh coriander can be replaced with fresh parsley, basil or sage
