South American Style Meat Sauce

Ingredients

Servings:
Makes:

1  red pepper, quartered and seeds removed
3  garlic cloves
0.25  onion, (segmented) or 2 sprig spring onions (cut into chunks)
1 handful parsley
0.75 cup olive oil
2 tsp ground cumin
2 tsp paprika
2 tsp salt
0.5 tsp black pepper
3 tbsp red wine vinegar, or white wine vinegar
1 tbsp Worcestershire sauce, optional
2  red chillies, optional


Instructions

STEP 1/3

In a pan on high heat grill the bell pepper, garlic, chillies (if using) and brown onion/spring onion for 2-3 min on each side until slightly blackened. 

STEP 2/3

Transfer to a bowl with a lid or cover with cling film to steam for a few minutes. 

STEP 3/3

Add everything into the food processor and pulse until small fine chunks for a topping on meat or seafood, not pureed.

This sauce makes an excellent marinade also and is great to keep in an airtight container in the fridge for up to a week.
