Sneaky Vegetable Meatballs

Healthy and delicious, these meatballs will be a healthy meal for the whole family.

Ingredients

Servings: 4

For the meatballs
160 g cauliflower, trimmed, florets of
130 g white cabbage, trimmed, cut to fit the feed tube
500 g turkey mince
1 Tbsp potato starch
1 tsp dried basil
0.5 tsp garlic powder
0.5 tsp onion powder
  salt, to taste
  pepper, to taste
  oil, as needed

For the BBQ sauce
450 g tomato passata
3 Tbsp dark brown sugar
115 g apple cider vinegar
2 Tbsp tomato ketchup
1 tsp smoked paprika
0.5 Tbsp Worcester sauce
0.5 Tbsp liquid smoke, optional
  salt, to taste
  pepper, to taste


Instructions

STEP 1/4

Preheat the oven to 190ºC
Line the baking tray with parchment paper
Assemble the Food Processor attachment to the machine
Fit the Fine Grating Disc, attach the lid and ensure it is locked into place

STEP 2/4

Grate cauliflower and cabbage on speed 3 into the Food Processor bowl
Transfer the grated vegetables into a large mixing bowl

STEP 3/4

Add turkey mince, potato starch, spices, salt and pepper into the large mixing bowl
Stir until thoroughly combined
Using wet hands, roll the mixture into 3.5 cm (1.5”) balls
Place the meatballs on the prepared baking tray
Drizzle with oil
Bake at 190ºC for 25 minutes
Remove from the oven and set aside

STEP 4/4

Add tomato passata, brown sugar, vinegar, ketchup, paprika, Worcester sauce, salt and pepper into a medium saucepan
Stir to combine
Place over a medium-high heat, stirring occasionally
Bring to a boil and reduce the heat
Simmer on a medium-low heat for 20 minutes
Transfer the meatballs to the saucepan
Stir until they are coated with the sauce

 

Serve

 

Substitutions:
Tomato passata can be replaced with sieved chopped tomatoes
Turkey mince can be replaced with chicken mince
