Salmon Latkes

Ingredients

Servings: 8
Makes:
For the latkes
700 g potatoes, peeled, halved
150 g onion, peeled, finely chopped
1 tsp fine sea salt
2  eggs, large, well-beaten
50 g plain flour
0.25 tsp black pepper
  olive oil, as needed
  fine sea salt, as needed

For the toppings
300 g sour cream
15 g fresh chives, finely sliced
220 g smoked salmon, cut into small slices

To serve
  fresh dill, as needed
  lemon, wedges, as needed


Instructions

STEP 1/6

Pre-heat the oven to 150ºC
Line a large baking tray with parchment paper
Assemble the Food Processor bowl onto the power unit
Fit the Thin Grating Disc, attach the Express Serve lid and ensure it is locked into place

STEP 2/6

Place a large bowl underneath the Express Serve
Grate potatoes into the large bowl using the pusher

STEP 3/6

Place a tea towel on a work surface
Spread the grated potato on the tea towel
Add onion on top
Sprinkle with sea salt
Let rest for 5 minutes to allow the salt to draw out some water
Bring the corners of the tea towel together, twist over a sink to squeeze out as much liquid as possible

STEP 4/6

Transfer the grated potatoes and onion into the large bowl
Add egg, flour and black pepper into the large bowl
Mix until combined

STEP 5/6

Place a large frying pan over a medium heat
Add olive oil into the frying pan
Heat until hot
Working in batches of 6, add a heaped tablespoon of the potato and onion mixture into the frying pan and flatten with a spatula
Ensure that each latke is spaced apart
Fry for 4 minutes until golden brown
Flip over and fry for a further 3-4 minutes
Transfer the latkes to the prepared baking tray
Sprinkle with sea salt
Place in oven to keep warm
Repeat the same process with the remaining mixture

STEP 6/6

Add sour cream and chives into a medium bowl
Mix until well combined
Remove the latkes from the oven
Top with 1 teaspoon of the sour cream and chives mixture
Place slice of salmon on top

 

Serve
Serve with a small sprig of fresh dill and lemon wedges
