Ricotta Gelato with Strawberries and Olive Oil

Ricotta is added to this gelato to give an incredible creamy texture and slight tanginess, which is scooped onto strawberries and topped with peppery olive oil for a perfectly balanced dessert.

Ingredients

Servings: 6

For the gelato
350 g whole milk
500 g ricotta cheese
60 g glucose syrup
40 g skimmed milk powder
100 g caster sugar
60 g dextrose powder

For the strawberries
350 g strawberries, halved
2 Tbsp caster sugar
1.5 Tbsp lemon juice
1 tsp vanilla extract

To serve
  extra virgin olive oil, as needed


Instructions

STEP 1/3

Fit the Whisk Tool.
Add milk and ricotta into the Appliance bowl.
Whisk for 2 minutes on speed 1, until well combined.
Remove the Whisk Tool and fit the Creaming Beater, fit the splashguard.
Heat for 1 minute at 60ºC, speed Stir 1.
Add the glucose syrup.
Mix for 5 minutes on speed Stir 1, until combined.
Add milk powder, sugar and dextrose.
Heat for 2 minutes at 85ºC, on speed Stir 1, until combined and no lumps remain.
Cook for 7 minutes at 95ºC, on speed Stir 1.
Pour the mixture through a sieve into a clean bowl and cover with plastic wrap.
Chill in the fridge for 2 hours.

STEP 2/3

Attach the Frozen Dessert Maker attachment to the machine.
Set the speed to Min.
Pour chilled gelato into the Frozen Dessert Maker attachment.
Mix for 30 minutes on speed Min.
Transfer gelato into an air-tight container. 
Cover with a lid and freeze overnight.

STEP 3/3

Fit the Knife Blade to the Food Processor attachment.
Add strawberries, sugar, lemon juice and vanilla extract into the attachment.
Blend for 20 seconds on speed Min.
Spoon strawberries into the serving bowls.
Top with gelato.
Drizzle with olive oil.

 

Serve.

 

Substitutions
Dextrose can be replaced with glucose powder.


Remember to place the Frozen Dessert Maker attachment in the freezer 24 hours in advance of making this recipe. The gelato will also need to freeze overnight before serving.
