Pumpkin Soup

Ingredients

Servings: 4
Makes: 1

150 g onion, roughly chopped
1  garlic clove, roughly chopped
2 Tbsp olive oil
400 g pumpkin, peeled, deseeded, cut into chunks
650 g vegetable stock, hot
  salt, as needed
  ground black pepper, as needed

To serve
  whipping cream, as needed
  fresh parsley, as needed, leaves only
  pumpkin seeds, as needed


Instructions

STEP 1/4

Fit the Knife Blade.
Add onion and garlic into the Appliance bowl.
Pulse until finely chopped.

STEP 2/4

Add olive oil into a saucepan.
Heat on a low heat until hot.
Transfer the onion and garlic into the saucepan.
Heat for 5 minutes on a low heat, stirring occasionally, until softened.

STEP 3/4

Add pumpkin into the Appliance bowl.
Pulse until roughly chopped.
Add the pumpkin into the saucepan.
Cook for 5 minutes on a medium heat, stirring occasionally, until softened.
Add vegetable stock, salt and pepper.
Bring to a simmer.
Cook for 20 minutes on a medium heat, stirring occasionally, until cooked through.
Remove from the heat and let cool for 20 minutes.

STEP 4/4

Transfer the contents of the saucepan into the Blender.
Select the Blend preset.
Add the mixture back into the saucepan.
Heat for 5 minutes on a low heat until warmed through.
 

To serve
Divide the soup between serving bowls.
Drizzle with cream, top with parsley leaves and pumpkin seeds.

 

Substitutions
Whipping cream can be replaced with double cream.
