Leftovers never tasted so good with these fun omelette spring rolls filled with stir fried mince and vegetables. They are packed with flavour and texture and don't take long to make.
Making the omelettes Add eggs, sesame oil, salt and pepper into a jug. Whisk until combined. Add olive oil into a frying pan. Heat until hot on a medium heat. Add about 2 Tbsp of the egg mixture into the pan. Swirl to coat base of the pan in a thin omelette. Cook for 30 seconds on a medium heat, until turning golden brown on the base and nearly set. Gently turn over with a spatula. Cook for 30 seconds on a medium heat until set. Transfer the omelette to a plate and cover to keep warm. Repeat the same with the remaining mixture.
Making the filling Add oil into a clean frying pan. Heat until hot on a high heat. Then add garlic and ginger. Assemble the Express Serve attachment with the Grating Disc. Place the attachment over the frying pan. Grate carrot into the pan using the pusher. Remove the Grating Disc, reverse and fit the Slicing Disc. Slice peppers and mushrooms into the pan using the pusher. Cook, stirring constantly for 2 minutes on a high heat. Add beef mince, oyster sauce, hoisin sauce, salt and pepper. Cook, stirring constantly for 5 minutes on a high heat. Add bean sprouts and coriander. Cook for 2 minutes on a high heat.
Place one omelette on a clean plate. Add a large spoonful of the mince mixture into the middle. Roll up the omelette. Repeat with the remaining omelettes and mince filling.
To serve Serve immediately, with sriracha sauce or sriracha mayo for a spicy kick.
