Mojito Cupcakes

These vibrant green cupcakes have a delicious minty base topped with a buttercream packed with just the right amount of rum for the perfect boozy dessert!

For the cupcakes
200 g caster sugar
110 g unsalted butter, cubed, at room temperature
2  eggs
3 tsp lime juice
2  limes, zest only
0.25 tsp mint extract
190 g plain flour
1.5 tsp baking powder
0.5 tsp salt
112 g sour cream
2 Tbsp white rum, optional
  green food colouring, as needed

For the buttercream
250 g unsalted butter, cubed, at room temperature
500 g icing sugar
4 Tbsp white rum, optional
2 Tbsp lime juice
0.25 tsp mint extract

For the decoration
1  lime, zest only
1  lime, sliced
 sprigs fresh mint, as needed

Instructions

STEP 1/5

Preheat the oven to 175ºC.
Line a cupcake tin with cupcake cases.

STEP 2/5

Making the cupcakes
Fit the K-Beater.
Add butter and sugar into the Appliance bowl.
Mix for 2 minutes on speed 3, and then scrape the bowl.
Add eggs, mint extract, lime juice and lime zest.
Mix for 2 minutes on speed 3.
Add flour, baking powder and salt.
Mix for 1 minute on speed 1.
Add sour cream, white rum (optional) and green food colouring.
Tip: Aim for a vibrant green colour.
Mix for 2 minutes on speed 2.

STEP 3/5

Divide the mixture between the cupcake cases.
Bake for 15 minutes at 175ºC.
Remove from the oven and let cool completely.

STEP 4/5

Making the buttercream
Clean the Appliance bowl and K-Beater.
Fit the K-Beater.
Add butter, icing sugar, rum (optional), lime juice and mint extract into the Appliance bowl.
Mix for 2 minutes on speed 3, and then scrape the bowl.
Tip: Start the machine on speed Min and gradually increase speed.
Mix for 2 minutes on speed 1.

STEP 5/5

For the decoration
Transfer the buttercream into a piping bag fitted with a large open star tip.
Pipe swirls of the buttercream onto each cupcake.
Then zest one lime over the cupcakes.
Decorate with lime slices and mint leaves.

 

Serve.


Store covered at room temperature for up to two days.
