Mince Pies

These traditional British pies are a festive must-have at Christmas. Fill with a dried fruit mixture, bake and serve with brandy butter.

Ingredients

75 g icing sugar
100 g butter, cubed, chilled


200 g plain flour
  salt, to taste
3 unit egg, lightly beaten


400 g mince pie filling
1 unit egg, lightly beaten


  icing sugar, as needed


Instructions

STEP 1/5

Fit the Knife Blade to the CookEasy + Bowl

Fit the CookEasy + Bowl to the machine

Pre heat the oven to 180°C

STEP 2/5

Add Ingredients 1 (sugar, butter,) into the CookEasy + bowl

Attach the lid and ensure the Filler cap is fitted

Blend on speed 12 for 30 seconds

STEP 3/5

Add the Ingredients 2 (flour, egg, salt) to the bowl

Mix on speed 12 for 20 seconds

Wrap the pastry in plastic

Chill in the fridge for about 1 hour

Roll out the pastry to 5 mm

Cut the pastry into rounds

Place the pastry in the cupcake pan

Bake at 180°C for 5 minutes

STEP 4/5

Add the first of Ingredients 3 (mince pie filling) into each of the pastry cups

Use the leftover pastry to cut out lids

Cut a small circle or Christmas shape out of the lid to decorate

Place the lids on top of each pie

Brush with the last of Ingredients 3 (egg)

Bake for 10 minutes at 180°C

Dust with icing sugar
