Fit the Whisk tool to the machine.
Add Ingredients 1 (yolk, mustard) into the Mixer bowl.
Attach the Mixer bowl to the machine and fit the splash guard.
Mix on speed Max for about 2 minutes.
Add Ingredients 2 (oils) to a jug.
Start the machine on speed Max.
Slowly pour the oils into the bowl.
Mix for 5 minutes or until all the oil is added.
Add Ingredients 3 (lemon juice) into the Mixer bowl.
Mix on speed Max for about 1 minute.
Add Ingredients 4 (oils) to a jug.
Add Ingredients 5 (lemon juice, seasoning) into the Mixer bowl.
Transfer the mayonnaise into a jar.
Serve.
You can keep the mayonnaise in the fridge for 3 days.
To make aioli: At the end whisk in 3 - 4 crushed garlic cloves into the mayonnaise.
To make spicy mayonnaise: At the end whisk 2 tsp Sriracha hot sauce into the mayonnaise.
