Ingredients

260 g flour
90 g icing sugar
30 g ground almonds
2 g salt
130 g butter, softened and cubed
1  egg


300 g double cream
1  mascarpone
40 g maple syrup


1 jar orange marmalade, sweet


200 g white chocolate
  food colouring paste, orange, as needed
3 pieces dark chocolate


Instructions

STEP 1/6

Place the butter in the bowl of the kMix, and work it with the icing sugar, ground almonds, salt and butter in the bowl, at speed 3

Add the beaten egg and mix again until the dough begins to form a ball

STEP 2/6

As soon as the dough comes together, stop kneading. It is important not to develop the gluten present in the flour: you would then have an elastic dough which deforms during cooking

Divide the dough in half. Using a rolling pin, roll out the dough between two sheets of baking paper to 3mm thick. Place these two cookie sheets in the fridge for at least 1 hour

STEP 3/6

Then cut out the shape of a fox from the two cookie sheets with a fine knife (by placing a fox template drawn on an A4 sheet on the dough). Repeat the operation with the other half of the dough. Remove the excess dough around the two foxes

Prick the dough with a fork if you don't have a perforated plate and a baking mat. Bake on two baking sheets for 20 to 25 minutes at 160°C

The dough should come out with a nice woody colour. The combination of low temperature and long cooking time ensures an evenly cooked dough and incomparable crispness!

Leave the dough to cool on a wire rack

STEP 4/6

Place the cream and the mascarpone in the kMix bowl, fitted with the whisk. Whip at speed 3-4, until you have a fairly firm whipped cream. Then add the maple syrup, and a little vanilla to intensify the aromas, whisk at speed 1 for 10 seconds

Place the whipped cream in a piping bag fitted with a No. 10 tip

Keep cool for assembly

STEP 5/6

On the final presentation dish, place a hazelnut of whipped cream

Place a first sheet of biscuit on this hazelnut of whipped cream and press lightly to stick the biscuit on the dish. This will prevent it from slipping

Then pipe the whipped cream with maple syrup onto the biscuit: hold your piping bag vertically in relation to the biscuit, gently squeeze the pocket and pipe pretty balls

First start by piping like a pearl necklace on the edges of the biscuit and then continue inside

Once all the biscuit has been covered, add hints of orange marmalade, which will bring a little acidity, and place the other plate of biscuit on top, press down a little

Following the lines of the template, reproduce with an edible marker the features of the face, ears and tail of the fox

Melt some white chocolate, divide it in half and colour one part orange. Place it in piping bags. Melt a small amount of dark chocolate to make the details (eyes, hair, nose...) Decorate the fox with the coloured chocolates!

Do not hesitate to place the fox in the fridge between each addition of decoration, to prevent the chocolate from running or mixing between colours

If you want an even prettier effect, don't hesitate to add a little gold
