Making your own fresh pasta is fun and satisfying, serve it with this classic tomato and basil sauce.
Making the pasta Fit the K-Beater. Add flour and eggs into the Appliance bowl, fit the Splashguard. Mix for 2 minutes on speed 2, until a dough forms. Transfer the dough to a work surface and knead lightly. Shape into a ball and wrap in plastic wrap. Chill in the fridge for 30 minutes.
Divide the dough in half. Attach the Pasta Roller attachment. Adjust the setting to 0. Tip: Sprinkle some flour between the rollers and on the dough. Start the machine on speed 1. Pass the dough through the rollers. Repeat passing the dough through the rollers, adjusting the setting down each time until you reach desired thickness. Repeat the same with the remaining dough. Cut the pasta sheets into 1 cm strips to make tagliatelle or cut as desired. Sprinkle the pasta with flour and set aside until ready to cook.
Making the sauce Add olive oil into a saucepan. Heat until hot on medium-high heat. Add onions. Sauté for 5 minutes on a medium-high heat, stirring occasionally, until softened. Add garlic. Sauté for 1-2 minutes, medium-high heat, until fragrant. Add tinned tomatoes, tomato purée, oregano, salt, pepper and brown sugar. Cook until boiling on a medium-high heat. Simmer on a medium-low heat, for 20-25 minutes, stirring occasionally, until thickened. Add fresh basil and stir to combine. Season with salt and pepper to taste. Tip: If you like a smoother sauce, use a stick blender to purée or pass it through a sieve.
Add water into a saucepan. Heat on a high heat, until boiling. Add salt and pasta. Cook for 3-5 minutes on a medium-high heat. Tip: The cooking time will depend on your preference. Drain the pasta and drizzle with a little olive oil.
To serve Serve with the sauce.
