Crunchy Coconut Oat Cookies

These crunchy oat cookies are easy, quick and inexpensive to make; a perfect addition to school lunches!

Ingredients

200 grams light brown sugar
225 grams salted butter
200 grams caster sugar
1 tsp. vanilla extract


230 grams plain flour
300 grams oats
200 grams desiccated coconut
100 grams pecan halves
1 tsp. baking powder
1.125 tsp. bicarbonate of soda
2  eggs


Instructions

STEP 1/4

Roughly chop the pecan halves.

STEP 2/4

Fit the K beater to the machine.

Pre heat the oven to 175ºC.

Line the baking trays with parchment paper.

STEP 3/4

Add Ingredients 1 (light brown sugar, butter, caster sugar, vanilla) into the Mixer bowl.

Attach the Mixer bowl to the machine and fit the splash guard.

Mix on speed 4 for 3 minutes or until light and fluffy.

STEP 4/4

Add Ingredients 2 (flour, oats, coconut, pecans, baking powder, bicarbonate of soda, eggs) into the Mixer bowl.

Mix on speed 4 for 30 seconds.

Roll the mixture into balls.

Gently flatten the balls and place them onto the lined baking tray.

Bake for 15 minutes at 175ºC until browned at the edges.

Leave to cool on a wire rack.

Serve.
