Cranberry and Bitter Orange Relish

Ingredients

2  oranges
100 grams cranberries
1.5 grams apples
40 grams light brown sugar
1.5 tsp. ground cinnamon
15 grams ginger
0.5 tsp. sea salt


Instructions

STEP 1/3

Trim the ends of the orange and peel, cut into quarters and remove the pips. Do not discard the orange ends.

Roughly chop half the peel.

Peel, core and roughly chop the apples.

Peel and roughly chop the ginger.

STEP 2/3

Fit the blade to the chopper attachment.

STEP 3/3

Add the Ingredients (oranges, cranberries, apples, sugar, cinnamon, ginger, salt) into the mixing bowl.

Mix to combine.

In batches transfer the mixture to the chopper.

Pulse until everything is chopped. Be careful not to over process.

Pack the mix into the jar. – TIP Top with the orange ends to keep the mixture submerged.

Wipe down the jar and fit the lid.

Let sit at room temperature for 1-3 days.

Check the jar daily for any mould, skimming if necessary, and taste.

Once you are happy with the taste, transfer to the fridge.

Serve.
