This recipe is a great way to use up any over-ripe bananas, paired with chocolate, oats, and maple syrup, for a delicious snack full of fruit and fibre.
Preheat the oven to 190ºC Grease the baking dish with 1 Tbsp of coconut oil Fit the K-Beater Add bananas into the appliance bowl, fit the splashguard Mix – 2 minutes, speed Min Mix – 1 minute, speed 1 and then reduce the speed
While the machine is running, slowly pour milk into the appliance bowl Mix until combined – 30 seconds, speed Min Add vanilla extract, 2 Tbsp melted coconut oil and maple syrup Mix – 1 minute, speed Min Add oats, cocoa powder, baking powder, ground flaxseed and salt Mix until combined – 2 minutes, speed Min
Pour the mixture into the baking dish Top with sliced bananas evenly Bake – 45 minutes, 190ºC Remove from the oven and drizzle with maple syrup Let cool – 10 minutes and then divide into 9 portions
To Serve Serve with a dollop of yoghurt Alternatively, let cool completely, divide into portions and refrigerate until needed
