Ingredients

Servings: 4
Makes: 1

2 Tbsp olive oil
450 g chicken breast, cut into 3 cm cubes
1.5 tsp plain flour
2 tsp curry powder
1 tsp ground cumin
120 g tomatoes, deseeded, roughly chopped
150 g onions, diced
2  garlic cloves, crushed
60 g water
100 g coconut milk
  salt, as needed
  ground black pepper, as needed
1 tsp lemon juice
100 g green apple, peeled, cut into 1 cm cubes
30 g flaked almonds
30 g sultanas


Instructions

STEP 1/2

Fit the Stir Tool.
Add olive oil into the Appliance bowl.
Heat for 1 minute at 110ºC, speed off, until hot.
Add chicken, flour, curry powder, cumin, tomatoes, onion and garlic.
Cook for 2 minutes at 110ºC, on speed Stir 2, until combined and then scrape the bowl.  
Cook for 2 minutes at 110ºC, on speed Stir 2,  until softened.

STEP 2/2

Add water and coconut milk.
Season to taste with salt and pepper and fit the splashguard.
Cook for 10 minutes at 100ºC, on speed Stir 3, until thickened.
Remove the splashguard.
Add lemon juice, apples, almonds and sultanas.
Cook for 1 minute at 100ºC, on speed Stir 2, until combined.

 

Serve.
