Carrot cake

An easy carrot cake, we've topped ours with cream cheese frosting but you can use vanilla butter cream or whipped cream.

Ingredients

Servings: 12
Makes:

220 g carrots, trimmed, peeled
125 g sunflower oil
230 g plain flour
1 Tbsp baking powder
1 tsp ground cinnamon
0.5 tsp mixed spice
0.5 tsp ground ginger
230 g light brown sugar
1  orange, zest of
3  eggs, beaten
  cream cheese frosting, as needed


Instructions

STEP 1/2

Preheat the oven to 180ºC
Grease the traybake tin and line with parchment paper
Assemble the Food Processor bowl
Fit the Coarse grating disc, attach the Express Serve lid and ensure it is locked into place
Place a large bowl underneath the Express Serve attachment
Grate carrots into the bowl using the pusher
Remove the attachment and set aside.
 

STEP 2/2

Fit the Knife Blade
Add oil, flour, baking powder, mixed spice, ginger, sugar, orange zest and beaten eggs into the appliance bowl
Select the Mix preset
Transfer the batter into the large bowl and mix until combined
Transfer the mixture into the traybake tin
Bake for 30 minutes at 180ºC
Remove from the oven and let cool
Top with a layer of cream cheese frosting.

Serve.
 


Sunflower oil can be replaced with vegetable oil.
