All-in-one Sponge

A quick delicious cake, great in the afternoon with a hot drink. We've used lemon curd and buttercream to sandwich the sponge, but you could use any jam or fresh whipped cream.

Product MultiPro OneTouch  Food Processor and Blender FDM73.850SS MultiPro OneTouch Food Processor and Blender FDM73.850SS

Ingredients

Servings: 8
Makes: 1
For the cake
250 g plain flour
2 tsp baking powder
250 g caster sugar
250 g unsalted butter, cubed, softened
4  eggs

For the filling
200 g lemon curd
200 g buttercream


Instructions

STEP 1/2

Preheat the oven to 175ºC
Grease two round 15 cm cake tins
Fit the Knife Blade
Add flour, baking powder, caster sugar, butter and eggs into the appliance bowl
Select the Mix preset
Divide the batter between the cake tins
Bake for 20 minutes at 175ºC
Remove from the oven and let cool.

STEP 2/2

Place one sponge cake on a serving plate 
Spread with lemon curd and buttercream
Place the other sponge cake on top.

 

Serve.
