Ingredients

40 g butter, cubed, softened
40 g plain flour


500 ml milk


1 tsp. salt
0.25 tsp. white pepper
0.25 tsp. nutmeg


Instructions

STEP 1/5

Lift the Cooking Chef head and fit the heat shield

Fit the Creaming beater to the machine

STEP 2/5

Attach the Cooking Chef bowl to the machine

Add the first item of Ingredients 1 (butter) into the Cooking Chef bowl, fit the splash guard

Cook at 95ºC, on speed stir 1 for 1 minute

Add the remaining item of Ingredients 1 (flour)

Cook at 95ºC on speed stir 1 for 3 minutes

STEP 3/5

With the machine still running, pour in Ingredients 2 (milk) into the bowl, a little at a time

Cook at 90ºC on speed stir 1 for 8 minutes until thickened

STEP 4/5

Add Ingredients 3 (salt, white pepper, nutmeg) into the Cooking Chef bowl

Mix on speed stir 1 for 20 seconds
