Mexican Turkey Burgers

Ingredients

Servings: 4
Makes: 4

500 grams turkey breast fillets


1 tsp. cumin
1 tsp. smoked paprika
1 tsp. dried oregano
1 tsp. chilli powder
1 tsp. salt
1  egg
3  panko breadcrumbs


1  avocado
100 grams cherry tomatoes
15 grams coriander
1  red chilli
1  lime
1 pinch seasoning


2  vegetable oil
4  brioche buns


Instructions

STEP 1/6

Cut the turkey into 2 cm chunks.

Peel, destone and coarsely chop the avocado.

Halve the cherry tomatoes.

Destalk the coriander.

Juice the lime.

Toast the rolls.

STEP 2/6

Fit the K beater to the machine.

Fit the Mincer attachment to the machine.

STEP 3/6

Pass Ingredients 1 (turkey) through the grinder attachment.

Place the mince into the Mixer bowl.

STEP 4/6

Attach the Mixer bowl to the machine and fit the splash guard.

Add Ingredients 2 (spices, salt, egg, breadcrumbs) to the bowl.

Mix on speed 1 for about 2 minutes or until the mixture comes together.

Divide the mixture into 6 and shape into patties.

Cover and chill for 30 minutes.

STEP 5/6

Fit the Food processor to the machine.

Add Ingredients 3 (avocado, tomatoes, coriander, chilli, lime juice, seasoning) into the food processor.

Blend until a chunky guacamole forms.

STEP 6/6

Add the first of Ingredients 4 (oil) into the frying pan

Heat over a medium high heat.

Fry the burgers for about 8 minutes on each side or until cooked through.

Place the last of Ingredients 4 (buns) on a serving plate.

Place a burger on each buns and dollop on a spoonful of guacamole.

Serve.
