300 g whole milk
325 g whipping cream
1.5 tsp vanilla extract
3 egg yolks
150 g caster sugar

Fit the Creaming Beater.
Add milk, cream and vanilla into the appliance bowl, fit the splashguard.
Heat for 2 minutes at 105ºC, on speed Stir 1, until combined.
Transfer the milk mixture into a jug, cover with plastic wrap and set aside.
Clean the appliance bowl and fit the Whisk Tool.
Add egg yolks and sugar into the appliance bowl, fit the splashguard.
Whisk for 2 minutes on speed 4, until well combined and slightly pale.
Slowly add the milk mixture while the machine is running.
Whisk for 3 minutes on speed 1 until fully incorporated.
Remove the Whisk Tool and fit the Creaming Beater.
Heat for 15 minutes at 85ºC, on speed Stir 1, until thickened.
Strain the mixture through a fine mesh sieve into a clean jug.
Cover with plastic wrap and let cool.
Chill in the fridge for 2 hours.
Attach the Frozen Dessert Maker attachment to the machine.
Start the machine, slowly pour the chilled mixture and mix for 30 minutes on speed Min.
Remove the attachment from the machine.
Pour the ice cream mixture into an airtight container and cover with a lid.
Freeze overnight or until solid.
Serve.
